High-Protein Blueberry Muffin Breakfast Bake
This is the perfect simple, prep-ahead recipe for busy weeks. It tastes like a blueberry muffin, but is secretly high in protein (thanks to the cottage cheese base), and will help to keep blood sugar and energy levels stable all morning long. You only need a few simple ingredients, and can make adjustments to your taste preferences. Try adding different fruits, and other mix-ins for flavor variations.
*Note: this make a small batch (~2 servings), so double the recipe if you’d like more!
Ingredients:
1 cup cottage cheese (I used 1% fat)
1 egg
1/4 cup almond flour
1/2 cup frozen wild blueberries
2 Tbsp pure maple syrup
1 Tbsp vanilla protein powder (optional, I used Drink Wholesome - you can use my discount code “RDN” for 10% off orders through their website)
1/2 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp cinnamon
Pinch of salt
Directions:
Preheat oven to 350°F.
Add the cottage cheese, egg, maple syrup, vanilla extract, baking powder, protein powder, and cinnamon to a medium-sized mixing bowl, and mix thoroughly until combined.
Fold in the almond flour and frozen blueberries.
Pour mixture into a lined baking dish (I used a small 5”x 7” square baking dish).
Bake for ~28-30 minutes, or until set and slightly golden brown on top. Enjoy!
