Savory High Fiber Waffles

Something that I frequently recommend and aim for personally, is incorporating veggies at breakfast whenever possible. I find that it sets the tone for the day so that you’re more likely to make food choices that best serve you, plus it helps you to increase your fiber and micronutrient intake. If you’re looking for ways to up your veggie and fiber game at breakfast, look no further than these savory high-fiber waffles!

Here, I topped mine with avocado and everything bagel seasoning plus a side of tomato salad, turmeric sauerkraut for probiotics, and some fresh currants. Other great topping options include smoked salmon, hummus, scrambled eggs, tofu scramble, or sautéed vegetables of your choice like mushrooms, spinach, and onions —yum!

Ingredients (yields 4 waffles, ~2 servings):

  • 2 Tbsp psyllium fiber

  • 2 Tbsp coconut flour

  • 2 Tbsp oat bran

  • 1/2 tsp baking powder

  • Pinch of salt

  • A few shakes of everything bagel seasoning

  • 1/4 tsp garlic powder

  • 4 egg whites

  • Avocado or coconut oil for the waffle iron

Directions:

  1. Heat a waffle iron sprayed with oil to prevent sticking (such as avocado oil spray)

  2. Mix all of the dry ingredients together in a medium-sized bowl.

  3. Add the egg whites and mix until well combined.

  4. Cook in the waffle iron as you would a regular waffle.

  5. Top with desired toppings and enjoy!
