Spinach Pie Crustless Quiche

This crustless quiche is a healthy and easy-to-make spin on Greek spanakopita (or spinach pie). It’s the perfect recipe to meal prep, because it holds up well in the fridge and can be reheated for a delicious breakfast or lunch the next day (or few days)! This recipe can easily be modified to suit your dietary needs, food preferences, and accommodate ingredients you already have in your fridge. For example, you can use all egg whites or all whole eggs if you prefer, swap in cottage cheese for ricotta cheese (or use lactose-free versions of either if needed), use parmesan cheese instead of mozzarella, sauté baby kale instead of spinach, use oat flour or wheat flour instead of almond flour, etc.

It’s got protein, fiber, and healthy fats to keep you feeling full and satisfied. Try pairing this with a Greek salad for a complete meal!

Ingredients:

  • 2 large eggs + 1/4 cup egg whites

  • 1/4 cup part-skim ricotta cheese (or low-fat cottage cheese)

  • 4 scallions, chopped

  • 2 garlic cloves, minced

  • 1 5 oz bag of spinach (I used fresh)

  • 1/2 a small yellow onion, diced

  • 1/4 cup crumbled feta cheese

  • 1/4 cup shredded part-skim mozzarella cheese

  • 2 Tbsp ground pecorino romano cheese

  • 1/4 cup finely ground almond flour

  • Pinch of salt & pepper to taste

  • Pinch of ground nutmeg

  • 1 sprig of fresh dill, chopped (or ~1 tsp dried dill)

  • Drizzle of olive oil (for sautéing)

Directions:

  1. Preheat oven to 350°F. Grease (or line with parchment paper) an 8x8” baking dish.

  2. In a medium-sized saucepan, sauté the garlic, onion, and scallions with the olive oil, until the onion is just translucent. Then add the spinach and sauté on low heat until slightly wilted.

  3. In a large bowl, mix together the eggs, cheeses, salt, spices, dill, and almond flour until well-combined.

  4. Add the sautéed onion, scallions, garlic, and spinach, and mix until well combined.

  5. Pour the mixture into the greased or lined baking dish and bake until set (~25-30 minutes). The corners should be slightly golden brown and the center should be firm and springy.

  6. Let cool, slice, and enjoy!

Note: this stores well in the fridge and can be reheated in the microwave or oven the next day.
