Rice Paper Summer Rolls

This is one of my favorite go-to summer recipes for when I don’t want to turn on the oven. They come together in just a few minutes, and are very customizable no matter your taste preferences and dietary needs. Don’t let the rice paper intimidate you! It’s easier to work with than you might think, and even if it tears or doesn’t come out perfectly rolled, they’re guaranteed to still taste good!

Ingredients:

Rolls:

  • Rice paper sheets

  • Cooked protein of choice (shrimp, tofu, kani, salmon, or any other protein you like!)

  • Sliced mango

  • Sliced Japanese cucumber

  • Sliced carrots

  • Sliced avocado

  • Sliced scallions

Sesame Peanut Sauce:

  • 1 Tbsp low-sodium soy sauce or tamari

  • 2 Tbsp coconut aminos

  • 2 tsp rice vinegar

  • 1/2 clove of minced garlic (or 1/4 tsp garlic powder)

  • 1 Tbsp creamy peanut butter

  • 1 Tbsp tahini

  • 2 tsp toasted sesame oil

  • 2 tsp honey

  • 2-3 Tbsp water (add more to thin, as needed)

  • Optional: squeeze of sriracha

  • Sesame seeds to garnish

Directions:

  1. Set up your work station by laying out the protein of choice and sliced veggies on a large cutting board or plate. Then fill a large plate or pan with about 1/2 an inch of room temperature water and set aside the rice paper. Make sure you have plenty of room on the counter for assembling the summer rolls.

  2. Soften the rice paper sheets one at a time in the plate or pan filled with room temperature water, by soaking for ~15-20 seconds. Then immediately lay the rice paper sheet flat on your working surface.

  3. Fill the rice paper with your protein and veggies, leaving a small gap at one end. Then fold the top and bottom of rice paper over the filling. Fold over the left side and continue rolling tightly to the right until it’s closed. Repeat this process for each summer roll.

  4. Place the summer rolls seam-side down on a plate to serve. Option to slice the rolls in half or into thirds (as pictured), but this is entirely optional for presentation.

  5. Whisk together ingredients for the sesame peanut sauce until smooth and well-combined.

  6. Drizzle the sauce over the rolls and top with a sprinkling of sesame seeds. Enjoy!
