Summer Corn, Cucumber, Tomato, & Avocado Salad

This refreshing salad screams summer and truly has it all—from the crunchy, cool cucumber to the sweet corn and tomato, to the creamy avocado and fresh, light dressing. It also makes for a great side dish to bring to a barbecue!

Ingredients:

  • 1 cup of cooked corn, cut off the cob or frozen

  • 1 medium-sized avocado, diced

  • 1 pint cherry tomatoes, halved

  • 1/2 medium-sized red onion, finely chopped

  • 1 cup diced Persian or English cucumber

  • 1 Tbsp extra virgin olive oil

  • 1 Tbsp lemon juice

  • 1 Tbsp lime juice

  • 1/8 tsp salt

  • Crack of black pepper to taste

Directions:

  1. Combine all of the chopped vegetables in a large bowl.

  2. In a small dish, whisk together the olive oil, lemon juice, lime juice, salt, and black pepper to make the dressing.

  3. Pour over the vegetables and toss to evenly distribute the dressing. Enjoy!
