Cauliflower “Wings”

IMG_1979.jpeg

Whether you need a super bowl snack, a barbecue side dish, a party hors d'oeuvre, or are looking for a tasty, veggie-forward snack, these cauliflower “wings” are just the thing! They’re slightly crispy on the outside and rich in flavor. Season with your favorite buffalo or barbecue sauce, or try a different spin by using a Thai peanut sauce—yum!

Ingredients:

  • 1 medium-sized head of cauliflower, cut into florets

  • 1 egg

  • 1/2 cup whole wheat flour

  • 1/4 tsp salt

  • 1/4 tsp paprika

  • 1/4 tsp garlic powder

  • Splash of unsweetened almond milk or dairy milk

  • Avocado oil spray (to coat the cauliflower florets)

  • ~ 1 cup of buffalo or barbecue sauce of choice (I used The New Primal Mustard BBQ sauce)

Directions:

  1. Preheat oven to 425 degrees F.

  2. In a medium-sized bow, mix together the egg, whole wheat flour, salt, paprika, garlic powder, and splash of almond milk or dairy milk (enough to form a thick batter consistency). Set aside.

  3. Spray the cauliflower florets with a light coating of avocado oil, then toss them in the batter until evenly coated.

  4. Toss the cauliflower florets in the batter so that they are lightly coated. Then place the florets on a lined baking sheet and bake for ~25-30 minutes, or until the florets are lightly browned. Let cool for ~5 minutes.

  5. Lightly coat the cauliflower florets in the buffalo or barbecue sauce by either pouring it over the florets, or pour the sauce into a large bowl and toss the florets in the bowl with sauce (make sure they’re sufficiently cooled first!).

  6. Arrange the cauliflower florets back on the lined baking sheet and broil them for about 3-5 minutes, keeping an eye on them the entire time so that they don’t burn. Serve and enjoy!
