3(ish) Ingredient Prebiotic Banana Oat Cookies
Not sure what to do with those overripe bananas sitting on your counter? Try these super easy prebiotic banana oat cookies. They’re made with just three core ingredients, contain no added sugar, and are naturally vegan and gluten-free — yet still soft, lightly sweet, and satisfying.
These cookies contain multiple sources of prebiotic fiber to help feed beneficial gut bacteria. While the base recipe uses only three ingredients, you can easily customize them with your favorite mix-ins for extra flavor and texture (see suggestions below).
Ingredients (yields ~10–12 small cookies):
Base ingredients:
2 medium ripe bananas, mashed (about ¾ cup)
1 cup rolled oats
2 Tbsp ground flaxseed
Optional (but highly recommended) add-ins:
Cinnamon, to taste
Mini dark chocolate chips, to taste
Other optional mix-ins:
Nut butter, vanilla extract, dried fruit (i.e., raisins), chia seeds, cacao powder, cacao nibs, freeze-dried coffee, nutmeg, chopped nuts, sunflower seeds, oat bran, wheat germ, or any other ingredients you enjoy.
Directions:
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, mash bananas until mostly smooth.
Stir in oats and ground flaxseed until well combined. Fold in any optional add-ins.
Scoop about 1½ tablespoons of batter per cookie and place on the prepared baking sheet. Gently flatten slightly (these cookies will not spread much).
Bake for 12–14 minutes, until set and lightly golden.
Let cool slightly, then enjoy.
Notes: Store cookies in an airtight container in the refrigerator for up to 5 days.
