High-Protein Chickpea Cookie Dough Bars (Vegan & GF)

These cookie dough bars are loaded with protein, and won’t leave you will a sugar rush - the perfect healthier-for-you sweet snack or dessert. It may sound strange to bake with chickpeas, but they actually lend themselves nicely to cookie dough bars due to their texture and consistency when blended! They’re also packed with plant-based protein and fiber to stabilize blood sugar and satiate you. The prebiotic fiber in chickpeas nourishes your good gut microbes, supporting a healthy gut microbiome, too. The vanilla protein powder I used not only ups the protein content of these bars, it also provides extra sweetness and that delicious vanilla cookie dough flavor.

Since this recipe is free from raw egg, you can even skip the baking and eat the cookie dough raw without worrying about contamination.

Ingredients:

  • 1 cup canned chickpeas, rinsed and drained

  • 1/4 cup creamy peanut butter

  • 2 scoops Nuzest Clean Lean Protein in Smooth Vanilla flavor

  • 1 banana

  • 1/4 tsp vanilla extract

  • 2 Tbsp pure maple syrup

  • Cinnamon to taste (I used 2-3 shakes)

  • Pinch of salt

  • Dark chocolate chips to mix in

Directions:

  1. Preheat oven to 350 degrees F

  2. Add all ingredients except for the dark chocolate chips to a food processor or blender. Blend until smooth.

  3. Stir in the dark chocolate chips.

  4. Pour the batter into a lined brownie pan, spreading the batter so it is evenly distributed. Bake for ~12-15 minutes. Let cool, then slice into bars. Enjoy!
