Dark Chocolate Walnut Truffles

These 6-ingredient, antioxidant-rich dark chocolate truffles are low in sugar, vegan, gluten-free, and sweetened with only the natural sugar from dates. They contain mood and energy-boosting phytochemical, theobromine which is naturally found in cacao. Theobromine has similar effects to caffeine and in small amounts, can provide both a mood and energy boost!

The walnuts in these truffles provide a rich, creamy consistency along with brain-boosting benefits. It's no wonder the shape of walnuts resembles the brain--studies suggest that walnut consumption is linked to improved cognitive performance and decreased cognitive decline, potentially due to their omega-3 fatty acid content.

Ingredients (yields 12 truffles):

  • 4 deglet dates

  • 2 Tbsp unsweetened cacao powder

  • 1/4 cup walnuts, chopped

  • 1/4 cup 100% cacao dark chocolate chips

  • 1/2 tsp cinnamon

  • Pinch of sea salt

Directions:

  1. Add all of the ingredients into a blender or food processor and blend until a smooth dough forms.

  2. Form dough into small balls (about one tablespoon of dough or less). If the dough is too sticky, refrigerate it for a few minutes first.

  3. Coat in extra cinnamon and cacao powder.

  4. Refrigerate for at least 15 minutes to allow the truffles to set, and enjoy!

Note: Store in the refrigerator for up to one week.
