Oatmeal Olive Oil Cookies

These hearty old-fashioned style oatmeal cookies are slightly crispy on the outside, soft on the inside, and made with all whole food ingredients. The rolled oats, wheat germ, and whole wheat flour make these high in fiber and less likely to spike your blood sugar than traditional cookies. While I used brown sugar in this recipe, coconut sugar would likely work well too!

Ingredients:

  • 1 cup rolled oats

  • 3/4 cup whole wheat flour

  • 1/2 cup wheat germ

  • 1/2 tsp salt

  • 1/2 tsp baking soda

  • 2 tsp cinnamon

  • 1/2 cup brown sugar

  • 1 egg

  • 1/3 cup olive oil

  • 1 tsp vanilla extract

  • 1 Tbsp water

Directions:

  1. Preheat oven to 375 degrees F

  2. Combine all of the dry ingredients in a medium-sized bowl and mix until well combined.

  3. In a large bowl, whisk together the wet ingredients.

  4. Add the dry ingredients to the wet and mix until well combined.

  5. Form into small tablespoon-sized balls and place on a cookie sheet, pressing down lightly in the center to flatten slightly.

  6. Bake for 7-9 minutes. Enjoy!
