Raspberry Chia Dark Chocolate Bites

Different variations of these 4-ingredient bites have been circulating around social media lately, so I decided to make my own version, and if I do say so myself, they came out delicious!

These raspberry chia dark chocolate bites are the perfect healthier-for-you treat, very appropriate for Valentine’s Day, or if you’re just looking for a few bites of something sweet after dinner. They’re also a fun way to sneak some extra soluble fiber and antioxidants into your day.

All you need are 4 ingredients!

Ingredients:

  • 1 cup of raspberries (I used fresh, but frozen would likely work too, just defrost them in the fridge or microwave)

  • 2 Tbsp chia seeds

  • 1 cup of dark chocolate chips or dark chocolate cut into small chunks (ideally 70% cocoa/cacao content or higher)

  • 1 tsp coconut oil

Directions:

  1. In a medium-sized bowl, mash the raspberries using the back of a fork or a masher.

  2. Add the chia seeds to the mashed raspberries and mix until well-combined. Let the mixture sit for 5-10 minutes to allow the chia seeds to absorb moisture and form a viscous gel.

  3. Scoop tablespoon-sized dollops of the raspberry chia mixture onto a lined baking sheet (just as if it were cookie dough), then freeze for at least 20 minutes, or until hardened.

  4. While the raspberry chia dollops are freezing, melt the dark chocolate and coconut oil in a double boiler until smooth.

  5. Coat the hardened raspberry chia dollops in the dark chocolate mixture. Then place them back onto the lined baking sheet.

  6. Refrigerate for a few minutes until hardened. Enjoy!

Notes: store in the refrigerator or freezer.
