Lemon Beet Hummus

This hot pink twist on hummus is filled with flavor and nutritional benefits! Beets contain nitrates which convert to nitric oxide in the body, causing vasodilation (expansion of blood vessels), potentially helping to lower blood pressure and improve endothelial function when consumed regularly. These nitrates may also help to improve athletic performance and brain function, as they promote more oxygenated blood to flow to the brain and working muscles when blood vessels are more elastic and dilated. Beets are also rich in potassium and folate--both vital nutrients for optimal health.

Aside from the health benefits of beets, this tasty spread will make any piece of toast, salad, wrap, sandwich, or vegetable instantly more vibrant and flavorful!

Ingredients:

  • 1/2 a large steamed beet, chopped

  • Juice of 1/2 a lemon

  • 1 cup of no-sodium added chickpeas, rinsed and drained (or 1 cup of boiled from dry chickpeas)

  • 2 Tbsp tahini

  • 1 Tbsp olive oil

  • 2 Tbsp apple cider vinegar

  • 1 clove of garlic

  • Pinch of salt

  • 1/4 tsp baking soda

Directions:

  1. Add all of the ingredients to a blender or food processor and blend until smooth. Add a little extra lemon juice or apple cider vinegar if you have trouble blending. Drizzle with extra tahini for serving and enjoy!

Note: Store in the refrigerator in an airtight container for up to 1 week.
