Pumpkin Spice Latte Smoothie

If you’re looking for ways to use up that leftover can of pumpkin puree after making pumpkin bread (or my delicious Pumpkin Spice Quinoa Muffins), try this tasty smoothie! It’s the perfect fall morning treat, reminiscent of the classic pumpkin spice latte, but this smoothie won’t spike your blood sugar or leave you with a sugar crash after drinking.

Pumpkin puree is not only festive and delicious, it’s also incredibly nutrient dense. Between antioxidant beta-carotene, soluble fiber, vitamin C, potassium, vitamin E, and more to leave you feeling energized and satisfied. I added frozen riced cauliflower to this smoothie (as I do to many of my other smoothie recipes!) because it provides a thick, creamy texture in addition to extra fiber and nutrition. And don’t worry - you won’t taste it with all of the other flavorful ingredients added.

Ingredients (yields 1 serving):

  • 1/2 a sliced, then frozen banana

  • 1/4 cup pumpkin puree (not pumpkin pie filling!)

  • 1/2 cup frozen riced cauliflower

  • 1 scoop vanilla protein powder of choice (I like Nuzest Clean Lean Protein)

  • 1 Tbsp smooth almond butter

  • 1 tsp freeze-dried coffee (regular or decaf)

  • 1/4 tsp pumpkin spice

  • 1/2 tsp cinnamon

  • ~1 cup unsweetened vanilla almond milk to blend

Directions:

  1. Add all ingredients to a blender and blend until smooth. Option to top the smoothie with extra cinnamon, pumpkin spice, or a sprinkle of your favorite high-fiber cereal or granola!
