Make-Your-Own Açaí Bowl

Açaí bowls are refreshing on a hot summer day, but smoothie shops often add unnecessary sweeteners, not to mention they can be quite expensive. Additionally, many açaí bowls lack protein, which may lead to a blood sugar spike or leave you feeling hungry an hour or two later. Making your own açaí bowl allows you to control the ingredients added and is kinder on your wallet, too! This recipe contains no added sugars, has protein, and is still just as refreshing and delicious as a store-bought bowl. It’s also forgiving and customizable, so feel free to take creative license and add or substitute ingredients as you would like.

Ingredients:

  • 1 packet of unsweetened açaí puree (I used Trader Joe’s)

  • 1/3 cup frozen riced cauliflower

  • Handful of baby kale

  • 1/4 cup frozen wild blueberries

  • 1/4 cup frozen banana slices

  • 1 Tbsp cacao powder

  • 1 scoop Nuzest Clean Lean Protein in Rich Chocolate flavor

  • Just enough unsweetened almond milk to blend (I used ~3/4 of a cup; the less liquid you use, the thicker the consistency!)

Toppings (optional):

  • 1 Tbsp creamy peanut butter (or other nut/seed butter of choice)

  • Sprinkle of cacao nibs

  • Sprinkle of granola of choice

Directions:

  1. Add all ingredients to a blender and blend until smooth.

  2. Pour into a bowl (or a glass) and add toppings of choice. Enjoy!
