5(ish) Ingredient Healthy Banana Brownies
My clients ask me for easy, healthy recipes to satisfy a sweet tooth all the time, and this one is a go-to recommendation. It’s made with just a few simple ingredients that you probably already have in your kitchen, and it can easily be modified to be vegan or dairy-free. It also happens to be naturally gluten-free for those who need it.
If you’re looking for the perfect way to use up an overripe banana, look no further!
Ingredients:
1 large banana, mashed
1 scoop chocolate protein powder (I used one of my go-tos, Drink Wholesome — you can use my code “RDN” for 10% off )
1-2 Tbsp cacao powder
2 Tbsp creamy peanut butter
Splash of plain kefir (or almond milk for a vegan/dairy-free option)
Optional but highly recommended:
Handful of dark chocolate chips
Pinch of salt
Splash of vanilla extract
Pinch of freeze-dried coffee or espresso powder (decaf works too — this enhances the chocolate flavor)
Directions:
Preheat oven to 350°F.
In a medium-sized bowl, mash the banana until smooth.
Add all remaining ingredients and mix until fully combined.
Pour mixture into a small lined baking dish or ramekin.
Bake for ~12–18 minutes, or until just set in the center.
Let cool slightly, then enjoy! Store in the refrigerator.
