Healthy High-Protein Cookie Dough Bites (Easy No-Bake Snack!)

These High-Protein Cookie Dough Bites are the perfect healthy no-bake snack when you want something sweet, satisfying, and nourishing. Made with oat flour, almond flour, vanilla protein powder, and creamy nut butter, they come together in minutes and deliver a balanced boost of protein, fiber, and healthy fats. They’re gluten-free, low in sugar, and ideal for a quick afternoon pick-me-up or post-workout bite.

Ingredients:

  • 3 Tbsp oat flour

  • 2 Tbsp almond flour

  • 1 Tbsp vanilla protein powder (I used one of my favorites, Drink Wholesome - use my code “RDN” for 10% off all orders through their website)

  • 1/4 tsp cinnamon

  • Pinch of salt

  • 2 Tbsp nut butter of choice (peanut butter, sunflower seed butter, almond butter, tahini, etc.)

  • 1/2 tsp vanilla extract

  • 1 Tbsp pure maple syrup

  • 1–2 Tbsp dark chocolate chips or chopped dark chocolate

Directions:

  1. In a small mixing bowl, whisk together the oat flour, almond flour, protein powder, cinnamon, and salt.

  2. Add the nut butter, vanilla extract, and maple syrup.

  3. Mix until a thick, cookie-dough–like texture forms.

  4. Fold in the chocolate chips.

  5. If the mixture is too dry, add ½–1 teaspoon of water or milk of choice; if too sticky, add a sprinkle of oat flour.

  6. Roll into 6-8 bite-sized balls, depending on size.

  7. Enjoy immediately or chill for 20–30 minutes for a firmer bite.

Notes: Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
