Made with oat flour, almond flour, vanilla protein powder, and creamy nut butter, they come together in minutes and deliver a balanced boost of protein, fiber, and healthy fats. Ingredients:
3 Tbsp oat flour
2 Tbsp almond flour
1 Tbsp vanilla protein powder (I used one of my favorites, Drink Wholesome - use my code “RDN” for 10% off all orders through their website)
1/4 tsp cinnamon
Pinch of salt
2 Tbsp nut butter of choice (peanut butter, sunflower seed butter, almond butter, tahini, etc.)
1/2 tsp vanilla extract
1 Tbsp pure maple syrup
1–2 Tbsp dark chocolate chips or chopped dark chocolate
Directions:
In a small mixing bowl, whisk together the oat flour, almond flour, protein powder, cinnamon, and salt.
Add the nut butter, vanilla extract, and maple syrup.
Mix until a thick, cookie-dough–like texture forms.
Fold in the chocolate chips.
If the mixture is too dry, add ½–1 teaspoon of water or milk of choice; if too sticky, add a sprinkle of oat flour.
Roll into 6-8 bite-sized balls, depending on size.
Enjoy immediately or chill for 20–30 minutes for a firmer bite.
Notes: Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
