High-Fiber Oatmeal Applesauce Muffins
These high-fiber oatmeal applesauce muffins are perfect for both kids and adults alike! Naturally sweetened with applesauce and maple syrup, they’re moist, tender, and packed with fiber to keep you full and energized. Perfect for breakfast, snacks, or lunchboxes — plus, they’re easy to make and freezer-friendly. Add optional mix-ins like raisins, nuts, or grated apple for extra flavor and nutrition.
Ingredients (makes ~9 muffins):
1 cup unsweetened applesauce
1/4 cup rolled oats
3 Tbsp oat bran
2 Tbsp ground flaxseed
3/4 cup whole wheat flour
1 large egg
1/4 cup pure maple syrup
1/2 cup unsweetened almond milk (or other milk of choice)
1 tsp vanilla extract
1¼ tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 Tbsp olive oil
Optional mix-ins: ¼ cup raisins, ½ cup chopped nuts, or ½ cup grated apple
Directions:
Preheat oven to 350°F. Line a muffin tin with paper liners or lightly grease.
In a medium bowl, combine rolled oats, oat bran, ground flaxseed, whole wheat flour, cinnamon, baking powder, baking soda, and salt.
In a large bowl, whisk together applesauce, egg, maple syrup, almond milk, olive oil, and vanilla until smooth.
Add dry ingredients to wet ingredients and stir until just combined. Batter will be slightly thick but moist. Avoid overmixing.
Fold in optional add-ins like raisins, nuts, or grated apple.
Spoon batter evenly into 9 muffin cups (about ¾ full).
Bake for ~20–22 minutes, or until a toothpick inserted in the center comes out clean.
Cool 5–10 minutes before transferring muffins to a wire rack. Enjoy!
Notes:
Muffins stay moist and hold their shape well.
Freeze individually or in a container for up to 3 months.
Want slightly sweeter muffins? Add 1–2 Tbsp maple syrup.
